Pumpkin Pie Bar Loaf sugar-free low-carb
With pumpkin season approaching, I knew I was ready to make all of our pumpkin dreams come true! This beauty can be made into donuts and or a loaf! And it will melt in your mouth! It is tender and MOIST!!!
Pumpkin Loaf
Ingredients:
1 ¼ cup almond flour
¼ cup coconut flour
½ teaspoon salt
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon pumpkin spice or more (adjust to taste)
2 tablespoons avocado oil
1 tablespoon vanilla extract
2 tablespoons heavy cream or oat milk
½ cup sweetener
4 large eggs
1 cup pumpkin purée
2 tablespoons maple syrup @choczero (use code LIFTINGISCAKE)
Glaze
1 cup powdered sweetener
2 to 4 tablespoons heavy cream or oat milk
1/2 tablespoon vanilla extract
Directions
Mix all ingredients in a bowl.
Preheat oven to 350 Fahrenheit
Prepare a loaf pan with parchment paper
Pour batter into pan
Bake for 35 to 40 minutes, or until the knife comes out clean
Prepare Glaze
Add all the glaze ingredients into a bowl and adjust consistency by adding more heavy cream
Once the loaf has cooled, you can drizzle the glaze
Slice and enjoy!
