I am so ready for fall!! Here is a quick easy recipe you can take to any gathering or just enjoy!! I’m obsessed with these! They low-carb and sugar-free!!


Cupcake:

1 yellow cake mix sugar-free (16 ounces)

1 cup water

1/4 teaspoon cinnamon powder

1/2 teaspoon pumpkin spice

1 tablespoon vanilla extract

15 ounces pumpkin purée

Topping:

8 ounces cream cheese

1/2 tablespoon vanilla extract

3 tablespoons sweetener

1 large egg


Directions:

  1. Preheat oven to 350 and prepare your muffin pan with cupcake liners.

  2. In a bowl combined all the cupcake ingredients. In a second bowl mix the cream cheese topping mixture.

  3. Scoop cupcake batter and add around 1 tablespoon of cream cheese on top. Using a toothpick swirl the top.

  4. Bake for 16 to 18 minutes, or until knife comes out clean.

  5. Topped them with whipped cream and some cinnamon powder.

With pumpkin season approaching, I knew I was ready to make all of our pumpkin dreams come true! This beauty can be made into donuts and or a loaf! And it will melt in your mouth! It is tender and MOIST!!!


Pumpkin Loaf


Ingredients:

1 ¼ cup almond flour

¼ cup coconut flour

½ teaspoon salt

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon pumpkin spice or more (adjust to taste)

2 tablespoons avocado oil

1 tablespoon vanilla extract

2 tablespoons heavy cream or oat milk

½ cup sweetener 

4 large eggs

1 cup pumpkin purée

2 tablespoons maple syrup @choczero (use code LIFTINGISCAKE)


Glaze

1 cup powdered sweetener

2 to 4 tablespoons heavy cream or oat milk

1/2 tablespoon vanilla extract

Directions 

  1. Mix all ingredients in a bowl. 

  2. Preheat oven to 350 Fahrenheit

  3. Prepare a loaf pan with parchment paper

  4. Pour batter into pan

  5. Bake for 35 to 40 minutes, or until the knife comes out clean

  6. Prepare Glaze

  7. Add all the glaze ingredients into a bowl and adjust consistency by adding more heavy cream

  8. Once the loaf has cooled, you can drizzle the glaze

  9. Slice and enjoy!



My biggest excitement is to recreate desserts and make them sugar-free. I was asked to recreate every girls scout cookies and here is my version of a Do si Dos. Let me know which girls scout cookie is your favorite, comment below.





Filling:

¾ cup creamy peanut butter

¼ cup butter, softened

¼ cup powdered sweetener

½ tablespoon maple syrup @choczero (use code LIFTINGISCAKE)

1 teaspoon vanilla extract

Cookie:

1 large egg

1 cup peanut butter chunky

1 cup sweetener

¼ cup oat fiber

¼ cup peanut chips @choczero (use code LIFTINGISCAKE)


Directions:

  1. Preheat oven to 350 fahrenheit

  2. Prepare a cookie sheet with parchment

  3. Mix all cookie ingredients and scoop onto parchment paper. Gently flatten and bake for 8 to 11 minutes

  4. Make filling. Combine all ingredients and mix well.

  5. Allow cookies to cool and add filling

  6. Enjoy!
