My biggest excitement is to recreate desserts and make them sugar-free. I was asked to recreate every girls scout cookies and here is my version of a Do si Dos. Let me know which girls scout cookie is your favorite, comment below.
Filling:
¾ cup creamy peanut butter
¼ cup butter, softened
¼ cup powdered sweetener
½ tablespoon maple syrup @choczero (use code LIFTINGISCAKE)
1 teaspoon vanilla extract
Cookie:
1 large egg
1 cup peanut butter chunky
1 cup sweetener
¼ cup oat fiber
¼ cup peanut chips @choczero (use code LIFTINGISCAKE)
Directions:
Preheat oven to 350 fahrenheit
Prepare a cookie sheet with parchment
Mix all cookie ingredients and scoop onto parchment paper. Gently flatten and bake for 8 to 11 minutes
Make filling. Combine all ingredients and mix well.
Allow cookies to cool and add filling
Enjoy!
FAUX OATMEAL
This is my first official blog recipe. And you know I won't be writing 100 paragraphs before you get to the recipe. I just wanted to welcome you to my first official Blog Recipe. I am known to create copy-cat recipes that taste exactly like the foods we love to indulged, I just make it low-carb and sugar-free.
Growing up oatmeal was a stable for breakfast. My mom made it warm and served it with a side of buttery toast! Here is my version:
Ingredients:
3/4 cup hemp seeds
1/2 cup fine almond flour, sifted twice
2 to 3 tablespoons sweetener
1/4 teaspoon cinnamon
1 tablespoon vanilla extract
11/2 cups almond, oat, or coconut milk( unsweetened if you want to save on calories)
2 tablespoons vanilla pudding
Toppings:
shredded coconut
walnuts, or any nut
fresh fruit, like strawberries
more milk
nut butter or cookie butter
maple syrup @choczero (use code LIFTINGISCAKE)
Directions:
In a clean mason jar add all ingredients listed above, leaving the milk to the end.
shake well, adjust to taste
